The Tale of Oreo Mousse


A place where Love is served edible. No Bill,Food without any price tag , A simple 4 course meal served with love, Respect towards food and Humanity where someone has already paid for our meal and we have to pay for the next coming person. A pouch given at the end where you can put the amount you want to give. “SEVA CAFE” where living is Giving and I fall in Love with a Mousse served as Dessert at this Magical Place.A very Simple yet a Toothsome Dessert, whose simplicity is the best Part of it.I had my first spoon and felt like having a dessert with complicated concoctions but then second spoon realized me, It was just Whipping cream with Cadbury Oreo Biscuits. Throwing some light on the place this cafe was opened on the concept of Atithi Devo Bhava which means to treat guest as God and this can really be seen ,when their modest staff serves food as you are a part of their family.In the See-saw of loss and profit they bear all the loss collectively but the 100% of any profit is used for support social service.This dining experience gave me enormous words to write and share.


Seva Means service and they are providing the service we offer to our known relatives who come our home, not to their known people but to the strangers whom they don’t even know .Their logo pictured above well describes their zeal towards food and humanity, i really appreciate how they have linked food with Morality because Having food is the most conventional stock of all the Humans, it is a run of mill which can connect million souls and this cafe is doing so from past decade, earlier they used to serve a well planned a-la carte menu  but now they have made it more simpler, Everyday there is a new complete four course menu served to 50 Guests from 7:00 pm to 10:00 pm, At every visit you will see different humble faces working to make this place more magical and spiritual. All the small elements adding to the artistic ambiance, gives a unforgettable experience of positivity  and belief in mankind.So one visit from your busy time is a must to complete and carry on the chain of giving and you could even do the volunteer service in this food temple by contacting them.

Talking about the food ,it can compete to any of the star restaurants, because that extra portion of love makes the food more delicious, working with proper hygiene they create mouthwatering dishes which are full of appetite and a good eye will get a balanced meal including drink and sweet dish and i brought the charm of that oreo mousse back home and created it to share with everyone. Here is the recipe.



  • 1 cup whipping cream
  • 5 Cadbury oreo Biscuits (choco-vanilla)


Whip cream for a minute and then add biscuits to it by crushing them and whip it again for 2-3 minutes so that biscuits gets properly mixed

Cool it in refrigerator if required

Note: You can also obtain a proper mousse consistency by whipping it well for 5-6 minutes
You will obtain a thick creamy consistency according to the above recipe. You can make it likewise, I would prefer it to be in cream consistency.


History and Evolution of Global Cuisine

After a busy Weekend, we would  enjoy a gourmet on a peaceful night at a fine dinning multi cuisine restaurant serving mouth watering and innovative food which is a perfect treat to our taste buds with an ambiance correspondent to the food. The moment we hold  the compulsive menu in our hands and take a look at the dishes which takes us to a food expedition of various countries around the world, makes us felicitous and eager to order some. At the same time some of the food enthusiasts would think how it all started, sitting on a table in Delhi, 5900 km from Italy and enjoying Authentic Italian food which was some day popular in the Italian streets only.”How Did the Globalization of Cuisine took Place?”. what is the history , that we enjoy multiple Global Cuisines at one place.

Global cuisine refers to the style or characteristics of food and cooking often associated with a region or country, that are followed all over the world. Presently we all are enjoying multiple global cuisines all over the world undergoing a fast evolution and becoming popular at a very fast pace.

The concept of cuisine started in late 18’s when a French Chef Auguste Escoffier designed the French classical Cuisine and designed the structure of Classical Menu. After this the record of recipes were being made.Also the Kings of that time,leading a luxurious life paid special preference to food and patronized them by calling chefs from across regions. Once the origin of French cuisine took place and the chefs got their stage.Every chef started working upon the regional and geographical influence on the food being served. They started modernizing their local regional cuisines and started Publicizing them. Also By the invention of trains and buses when transportation became easier people started travelling, brought a big revolution as the food traditions and habits of different regions got mixed and familiar with others.

With the Invention of Refrigerator in late 19th century the food was now possible to be shipped across the globe. once the chefs and the people came across this the real era of Food Globalism started and Global Cuisines came into Existence.The chefs started travelling from one place to other in globalising food trends and started working on their evolution. Also with the modernizing in the life styles and eating habits of the people the simple cuisines such as Italian,Lebanese,Thai also became popular and reached a global platform. culinary shows have also contributed a lot to the Globalisation of  Cuisines by popularizing  various cuisines on an international platform. All the cuisines that we enjoy today are result of continuous evaluation and modernisation,taken place in  past decades.

Kashmiri Food- Halwa with Parantha

Kashmir ,the Heritage land in northern region of India, Known as Heaven, a region Possessed by natural beauty and the inheritance which nature has Given to it.An assortment of distinct yet mesmerizing Traditions and culture of kashmiri Pandit’s & Muslim’s which are quite divergent but still tied in an Ethnic Knot.Feel the environment and you will fall in love with this place . The diversity of people can be seen also through the Food of Kashmir . kashmiri food mostly include slow cooked foods which has a flavor  burst of balanced spices, use of onions is very minimum in the dishes resulting in thin gravies which are often thickened by yogurt. A major  part of kashmiri Dishes includes Mutton of around 30 types, halal chicken is found where chicken is cut and let bleed. Rice dishes including Biriyani and Pulao are prominent where  Wazwan is their most famous delicacy, made with stacks of rice including mutton, barbecued ribs and seekh kebab served with yogurt and dips. It is  treated with great respect and eating it is done with a ritual where group sits together around and starts it by washing their hands.


During my recent  visit to Kashmir I found meat being served  at every single food place.There were hardly 4-5 Pure veg restaurants including The Krishna Dhaba which was serving a good veggie gourmet. Exclusive of  Meat the only veg food that You will find most often is Halwa with Parantha.  It is available at every food stall whether it is roadside vendor or a big refreshment  kiosk.

Kashmiri Halwa– It is basically a Dense Sweet dish with a crumbly and coarse texture, made form Semolina and Milk,Ghee as Primary Ingredients, its taste would always enlighten your  taste-buds with the warm Hospitality and gastronomy of Kashmir. It is Garnished with Grated Coconut and Nuts and served, an all time companion of Parantha .It is  conventional Sweet dish of localPeople and households as it always a gourmet with less of efforts. It is more sweeter than other halwas and the aroma, color and flavor of local Kashmir saffron added is a cherry on the cake. i went around the Hazratbal Mosque and found a plenty of vendors selling this whose face would tell the precision they had in this art.

Kashmiri Pqrantha– Just having a Halwa is being bias to the vendor selling it, having this Parantha,which is a Flat Bread made From whole  purpose flour. Coupling it with halwa is the best way to have a all time gastronomic experience, blending yourself to this paramount food culture of the region.

This Parantha is  High demand in Kashmir for Breakfast. Making this is not everybody’s Cup of Tea, It is an art which demand a lot of skills and practice for precision and this distinct taste and texture. The process looks very simple where they make a dough from flour, salt and milk, taking a large loaf   in 1 batch and Flattening it in a circle of 1-1.5 m in Diameter. It is so Big that it needs intense care and command to Flatten it. After this skill test it is deep fried  it in hot oil, giving it a crispy brown texture. if i would be given this job, then surely it is going to be a challenging time i guess. When it comes out of Hot Sizzling oil its aroma and Texture  will make you to try it. It is so huge and heavy that it is Sold by weighing per Kilogram.

The twosome of Halwa and Parantha will  give you an amazing Food sensation  which will directly connect you to the food Heritage of Kashmir. So for your next visit to Kashmir do note down to taste this duo gourmet on your Task list.

Khalifa Khatai – SARHAD

The visit to the Restraurant which connects the different Food cultures of “India” & “Pakistan”, SARHAD gave me a saveur of the Lahori Khatai with Falsa Ice cream”.The dish made my taste buds exotic with a Lahori  flavour in India.

The Khatai is specially imported from Lahore.It is extremely soft with very delicate flavours.The falsa ice cream with chocolate syrup is very refrashing with a unique flavour of Falsa(found in Pakistan) . Though you have to tighten your pockets, to spend 200 bucks on it but its Flavours will make you pockets loose again.

                                          Sarhad basically means border .Barely a kilometre-and-a-half from the international border in Punjab between neighbours India and Pakistan,this restraurant is a fusion of Ido-Pak cultures


Not only Food,you will see the art of pakistan on the walls and especially the two trucks painted by  Haider Ali is  marvellous, reflecting the Friendly and Harmonal relations of India and Pakistan.
